Gault & Millau
Founded in Paris in 1972 by two French journalists, Henri Gault and Christian Millau, it is currently available in 15 countries around the world. A Japanese version was released in 2017. Gault & Millau does not just evaluate food, but also evaluates everything from the reservation phone call to the departure, giving a score out of 20 points. Based on this, the rating is published based on the number of “toques” (maximum 5), which refers to the long white chef’s hat in French.
It is a restaurant guide that maintains a high level of trust in the culinary world by maintaining a unique stance of focusing on the professionals who support the entire stage of the restaurant.
